With AUSTRALIA DAY just a week away and as i mentioned last week if you are planning a leg of lamb cooked on the rotisserie at home then this simple home made rub applied to the roast prior to commencing the cook and at some intervals during makes for a delicious mouth watering roast. ( INGREDIENTS ) 100ml Aussie olive oil, 2 fresh garlic cloves, a large sprig of fresh rosemary. You can substitute minced garlic and dried rosemary commercially available if you dont have access to fresh produce. ( METHOD ) Into a clean container with lid ( i use a recycled jar with lid, eg jam jar etc ) pour in the olive oil. Finely chop the garlic and rosemary and add to the oil. Screw the lid tight and shake vigorously. Thats it, now simply wipe/smear this all over the roast, you can make some long shallow incisions on the meat if you like, then commence cooking on the rotisserie. During the cook you can drizzle some on the roast as it turns. You can view our video ( Friday 16th January ) when we did a cook up at Rosebud Cricket Club ( VIC ) . We had 2 legs of lamb with 2 rolled legs of pork all on THE WEDGE fire pit and camp cookers, actually we used two in tandem. Cheers, Waz from Oz slotmein.au
