Yum! ~ Roasted Garlic & Basil tossed Grilled Vegetables ~ 2 zucchini, sliced lengthwise 1 vidalia onion, cut in half and separated 2 tomatoes, halved 1 red pepper, quartered * optional 1 small eggplant, sliced * optional 1 small head of garlic, cut across the top ¼ cup extra virgin olive oil 2 tbsp balsamic or apple cider vinegar Coarse sea salt Freshly cracked black pepper 1 small handful of fresh basil, chopped ¼ cup more extra virgin olive oil Preheat grill to medium heat 1. Combine the ¼ cup olive oil & balsamic/apple cider vinegar & coat all the vegetables & season to taste 2. Wrap the head of olive oil brushed garlic in foil, cover & start grilling (if you use the stuff… you can roast in an oven without the foil… just never tried it directly on the grill yet) .. should take about 30 minutes 3. Grill the vegetables, about 20 minutes 4. Remove the vegetables from the grill & slice 5. Squeeze the garlic out of the head into a bowl with the remaining olive oil and the basil 6. Toss the sliced vegetables with the oil, garlic & basil
