Although there are quite a few Japanese sushi restaurants all over the Fraser Valley area at the most of the market place square in the suburb of the Metro Vancouver, such as Surry, White rock, Langley, and Abbotsford, there are not so many Japanese who work at the Japanese sushi restaurant; instead, most of them are owned by Korean family. They came to Canada for this family business as a landed immigrant and resided in this area, probably for the past few decades. Many of them are the landed immigrants of Canada. Therefore, there is a tight ethnic and community bondage as the Korean Canadians, and reflect their dietary culture on their business as well. For example, according to my Korean pastor who is a friend of one sushi restaurant, it is not unusual that they use Korean soy source or some condiments in their recipe. It seems that the manner of their restaurant management is deeply influenced by the manner of Korean immigrants instead of Japanese one.
