Hope you enjoy it as much as I do! “Vegged Up” Lettuce Wrapped Burgers with Chili Lime Sweet Potato Fries 6 Servings Ingredients (Burgers) • 1 To Taste Salt • 3 Pound(s) Ground Beef • 3 Small Handful(s) Fresh Parsley, Chopped • 1 To Taste Pepper • 2 Fresh Leek(s), Chopped • 3 Large Egg(s) • 1 Large head of romaine lettuce • 1 tomato, sliced • 1 red onion, sliced into rings ________________________________________ Instructions 1. Mix all the ingredients together well. 2. Form into meat patties 3. Grill or pan fry. 4. Serve wrapped in lettuce leaves, with tomato, red onion, and add spicy mustard and pickles (optional) **Great when served with the following recipe, Chili Lime Sweet Potato Fries Ingredients (Sweet Potato Fries) Serves 6 • 1/4 Cup Coconut Oil • 1 Teaspoon Salt • 1 Teaspoon Garlic Powder • 1/2 Fresh Lime Juice • 3 Medium Sweet Potato • 1/2 Teaspoon Chili Powder • 1/2 Teaspoon Coriander ________________________________________ Instructions 1. Preheat the oven to 400 degrees. 2. Peel and slice the sweet potatoes. 3. Bring together the spice blend in a small bowl. This would be the chili powder, garlic powder, ground coriander and salt. 4. Melt 1/4 cup of coconut oil and pour over the fries. Toss to coat. 5. Once the sweet potatoes are covered in the melted coconut oil, start tossing in the spice blend. Do this quickly as the coconut oil will start to solidify again as it cools. It’s not a big deal if it does, it just means the spices won’t distribute as evenly. I’m sure you can figure out a way to work around that. 6. Place the seasoned fries in your favorite roasting pan or cookie sheet and roast at 400 degrees for roughly 25-30 minutes. 7. These fries will be quite fragrant when they are done cooking. 8. Serve hot and squeeze on some fresh lime juice just before eating. Thank you! Enjoy
