Its what chefs have know all along – fresh, real, whole local foods make the best meals. But its not just the undeniable nummy factor that is important here. More and more people are becoming aware of the direct link between commercially processed foods and our epidemics of chronic health conditions, especially those in children. For example, at current rates, MIT scientists predict that one in two children will have autism by the year 2025. Of course it is a complex puzzle where no single cause can be named, but undoubtedly food is a major player in all degenerative disease. Hippocrates was correct in saying that we are what we eat. As awareness around nutrition and health increases, demand for high quality food rises. There is a real need for education around real food preparation as the knowledge of many traditional methods hasnt been passed down in our fast paced, fragmented world. There is also a need for take-out nutrient-dense food that busy parents can grab and know that they are truly nourishing themselves and their families – things like authentic bone broth soups, fully cooked meals made from grass-fed meats, and gut-healing fermented foods. The definition of fast/convenience foods must change from the corporate model of unsustainable, chemically concocted food-like products, to one of local, real, chemical-free traditional food that supports local farms, cruelty-free animal husbandry - systems that regenerate both our life-giving soils and human health.
