2013 Cuba Cash Store – Two Doors Down BBQ Challenge Rules 1. Each Team will pick up 3 slabs of Baby Back BBQ ribs (already thawed) and 12 chicken thighs at Cuba Cash store on Saturday, September 28 between 7and 9 AM. Ribs and chicken must be cooked on site and not removed from premises. 2. A $75 Registration Fee must be paid at time of entry which will include the cost of the ribs and chicken. Entry fee also includes space to cook, access to bathrooms and refreshments. One electricity hookup will be provided to those who use electric cookers. Smokers/Grills of any kind are permitted…i.e., gas, pellet, electric, propane, wood, etc. 3. BBQ Challenge – each team will consist of a chief cook and as many assistants necessary. A single cooker may be used by more than one team. All cooking for the BBQ challenge will be done within the assigned cooking space as assigned at check in. 4. Competitors must provide basic equipment and supplies to cook with. Canopies, chairs, signs, banners, etc. are responsibility of the team. 5. Teams are encouraged to register as early as possible, but not later than Close of Business MONDAY, September 23rd. 6. Cooking time can begin as early as 7 AM. Turn in time is 4:00 PM for chicken; 4:30 PM for ribs. Contestants will be provided turn in boxes and must present to the judges 5 (five) individual servings (no garnish) of chicken and ribs. No side sauce containers will be permitted in the meat judging containers. Meats may be presented with or without sauce on it as the contestant wishes. Sauces may not be pooled or puddled in the container. Judging will be based on APPEARANCE, TENDERNESS/TEXTURE and TASTE and score from 10 to 1 with 10 being excellent; 2 below average and 1 unacceptable. 7. Prizes will be awarded for 1st – 3rd Place at approximately 5:30 PM. All proceeds (after expenses) will be returned to contestants as prize money. Remaining samples may be passed out to observers as available by the BBQ team. The following miscellaneous cleanliness and safety rules will apply: • You may cook your ribs in any manner that you feel will deliver a competitive product in the time allowed, provided that safe food handling guidelines are followed. • Fires may not be built on the ground. Ashes must be disposed of offsite and only in approved ash disposal containers. • It is the responsibility of the contestant to see that the team’s assigned cooking space is kept clean and policed following the contest. All fires must be put out and all equipment removed from site. • Cleanliness of the cook, assistant cooks and the team’s assigned cooking space is required. Shirt and shoes are required to be worn. • Safe sanitizing of work area must be implemented with the use of bleach/water rinse with a separate container for washing, rinsing and sanitizing utensils. • No controlled substances shall be used by the team, members and/or guests. • Foul, abusive or unacceptable language by a team or its members or guests will not be tolerated. • There will be NO REFUND of entry fees for any reason except at the discretion of the event organizer, Cuba Cash Store/Two Doors Down. The decisions and interpretations of the Rules are at the discretion of the Cuba Cash Store/Two Doors Down representatives. Their decisions and interpretations are final. Failure to comply with the rules and regulations established in this document may result in disqualification.
