7 Day Spring Detox begins May 3 with our Certified Nutritionist, Pauline Weissman. westhartfordyoga/why_workshops.htm In the meantime, heres one of Paulines recipes, perfect for this rainy early Spring day. Mushroom Bisque • 2 medium potatoes, peeled and chopped • 1 ½ cups water • 1 ½ tbs. olive oil • 2 cups chopped onion • 1 small celery stalk, minced • 1 ½ pounds mushrooms, rinsed ( I use a variety of baby bellas, shitake, cremini and white mushrooms) • 1 ½-2 tsp salt • 1-2 small garlic cloves, minced • ¼ tsp thyme • 2 tsp soy sauce or soy sauce alternative (Bragg’s liquid aminos works great) • Fresh black pepper to taste • Minced scallions Place potatoes into pot with water. Cover and bring to a boil and simmer until potatoes are tender. While the potatoes are cooking, pour the olive oil in a dutch oven and add onion and celery and sauté over medium heat for about 5 minutes. Add in the mushrooms and salt. Cover and cook for 10 minutes, stirring occasionally. While the mushrooms are cooking, add in thyme and garlic. Remove from heat, stir in the soy sauce and pepper. Using a food processor or blender, puree both the potatoes in their cooking water and the mushroom sauté in its own liquid. Combine the purees in a kettle or dutch oven. Stir, and heat gently. Taste to adjust seasonings. Serve hot, topped with the diced scallions.
