7. How to spatchcock a chicken: Its really easy to turn a whole bird into a flattie! Turn the chicken over so it is breast-side down. Take a pair of kitchen scissors or a very sharp knife and, starting at the tail end, slice along one side of the backbone. Cut right through the ribs, all the way to the neck end. Repeat on the other side of the backbone, and discard it (or keep it for stock!) Turn the chicken over again and flatten it by pressing down hard on the breast bone to break it. Luka
