A Good Saturday people! Shimbashi Soba sits away in the basement of Paragon Shopping Mall for the longest time. We bring you on a little journey of its Japanese parent company. RE&S is founded in 1988 by Hiroshi Tatara, Osaka. The brands under its umbrella include Kuishin Bo, Kuriya Dining, Ichiban Boshi and of course, Shimbashi Soba! They are always dedicated about their technical creations of fine and truthful ingredients. Mr Hiroshi Tatara, 63, chairman and president of the RE&S restaurant group, which owns 26 outlets here, including the fine-dining Japanese chain Kuriya, says: With an annual turnover of about $75 million for our restaurants, this is equivalent to having every person living in Singapore visiting one of our outlets once a year. Their products will definitely cater to the different taste buds in various regions. Like Shimbashi Soba, they produce their own buckwheat seeds, being milled into refined flour. The soba is handmade by a classic good Japanese master, which spells the goodness of the fragrant aroma and texture.
