A-Live Bread We mix the dough, we knead the dough we let it rise! We pat the dough and shape the dough and it grows before our eyes hot brown loaf from a little ball it rises up to feed us all..... At every Waldorf playgroup session, the children and the parents shape their ball of dough and wait for it to bake. Sitting down together to savour their bread is a much awaited moment. While every bite is chewed on, I watch hungrily for cues on the breads acceptability ! The recipe for the dough is constantly in experimentation - with different vegetables, herbs, spices and ofcourse water kefir. I have been asked to share the recipe by parents for themselves and sometimes.....recommended to others. So enclosed below is the basic formulation....for your experimentation! 500 grams base- (325 g spelt flour, 175 g mix of vegetables, sprouted tofu and herbs) 1 tbs flaxmeal 1 tbs Amaranth flour 1tsp himalayan salt 2 tbsp coconut oil 1 tbsp raw honey/maple syrup pinch cinnamon powder enough water kefir to knead Mix and knead the ingredients. cover with wet cloth and leave it overnight. Knead the dough again in the morning and let it rise again. Last playgroup term, I experimented with different colours of dough - beetroot, green, orange and brown using just vegetables and beans. Different herbs were added to each batch according to taste compatibility. I also have started to include Finger Millet (Ragi) for its iron content. We have our days when the bread is gorgeous and on some days a little tangy or sticky! But still I am happy serving it to my group of angels. Its wholesome.
