A a fun on the go Paleo breakfast Recipe (Gluten and dairy free): Breakfast Muffin Cups 1. Grease muffin cups in muffin tray (coconut spray preferable). 2. Add ham or cooked bacon to bottom of cups. 3. Combine raw egg and diced peppers and/or mushrooms and pour into muffin cup. 4. Optional: add chives or diced green onions to egg and pepper mixture. 5. Bake at 350° for 13 to 15 minutes or until set. Eat! Enjoy!
