A couple of days ago I was supposed to make a large batch of taco meat for a pot luck at work, I had some ground pork in the freezer so I used 50/50 with beef. We decided we did not like the flavor but I was determined to salvage it (I bought food to take to work!) So, today I made up a Mexican casserole and it was good! I used pinto beans & red enchilada sauce layered with strips of corn tortillas smothered in shredded cheese. Served with rice and chips! Day saved! Sometimes it is just something to eat but I am glad I did not waste that meat.
