A few people asked for the ingredients for the chicken soup that I made yesterday, so here it is: 1 lb boneless, skinless chicken breasts 2 T lemon juice (fresh squeezed if possible) 1 heaping T minced garlic 1/4 t ea California and Florida pepper (from Penzeys) 1/8 t cayenne pepper 2 t turmeric 1 T Natures Seasonings (Morton) 1 T chives 1/2 tsp ground ginger 1 t chopped fresh thyme 2 T butter 4 bay leaves 1 T Low Sodium flake salt (Penzeys) 1 32 oz box Kitchen Basics unsalted vegetable broth 1 32 oz box Kitchen Basics unsalted chicken broth 2 large onions, peeled, halved, then cut into 4 pieces and diced 5 large celery stalks, washed, peeled and sliced 5 large organic carrots, washed, peeled and sliced I poured the broth into my crock pot, put all of the spices and vegetables in and mixed it up good then put the raw chicken in and set it to High and just let it go for about six hours. I take the chicken out, cut it into chunks, then return it to the soup. Taste it and adjust any seasonings at this point. I was very conservative with the lemon juice, ginger and peppers. Next time I make this, I will put a bit more of those in. You want it to have a bit of a kick to help with any congestion. Because of the turmeric, this soup will stain, so be careful with it. It is very tasty, and hopefully it will help us get over this cough and cold that we have. :)
