A few weeks back it was our turn to host the poker group – we’re 3 couples and very close friends who rarely play poker anymore, because we’re too old and fall asleep. As you would expect; I usually do the cooking, but this year our date fell on the same date as all the communions in the area, so I was too busy at work to cook. I took a leap of faith and asked Amy to cook – Wow were we very happy that she did –Chinese Ribs!!! Honestly these ribs are addicting – so much so that we have decided to offer them this coming Saturday and Sunday for the Memorial Day weekend. Yes, I know it’s not very American of me – but in reality it is, because our great country is the true melting pot of the world. I also think it’s a great way of showing our support for all nationalities that served our country and gave their lives so that we can be the greatest nation on the planet. Amy’s mom taught her how to make Chinese spareribs. This easy recipe she remembers making as a small child along side of her mom, it was her very favorite, and it is good served hot and fresh, or cold the next day. In my quest to serve all sorts of food from around the world – this is the one I have chosen from China and believe me – You will become addicted at the first taste!
