A great & very fun veggie option!! And it looks like dinner is complete! Veggie Stacks Serves 6 A fun take on roasted veggies Prep Time - 15 min Cook Time - 20 min Total Time - 40 min Ingredients: 1 medium yellow squash, sliced 1 medium zucchini, sliced 1 red bell pepper, sliced 1 medium eggplant, sliced 1 small onion, sliced 2 tbsp olive oil 1 tsp salt 1 tsp pepper 1 tsp chili powder Instructions: 1.Preheat oven to 425 2.Line a rimmed baking sheet with parchment paper 3.In a medium bowl combine all the sliced veggies 4.Pour olive oil and spices over veggies and with your hands mix all together until all the veggies are evenly coated 5.Using short skewers, or extra long toothpicks, stack your veggies starting with the pepper on the bottom and then the eggplant, onion and several zucchini & squash layers 6.Place stacks on baking sheet and bake for 20-25 minutes or until veggies are tender 7.Serve immediately & ENJOY!!
