A healthier twist on an old Italian favorite. Gluten free, dairy free Chicken Marsala. Blanch sliced chicken breasts in almond meal and a little sea salt and pepper. Sauté 3 cloves of garlic, sliced thin, with mushrooms and 1-2 tsp of Ex Virgin olive oil. Season with sea salt and pepper to taste. Once done set aside. The using misto olive oil sprayer, spray pan and brown the chicken and remove. In same pan add 3/4 cup of Marsala cooking wine and 1/4 water. Bring to boil. Add chicken and mushrooms. Sauce will be a bit chunky bc of the almond meal so after it cooks together for a few min I take out all meat and mushrooms and blend up the sauce in Bullet to make creamier then add back to pan. You can put over brown rice or brown rice pasta. Was delish!
