A low intestinal pH is crucial for protein digestion and the absorption of many nutrients, including calcium, iron, B12 and folate. The ideal pH of the stomach is from 1-2. When the pH is above 4, certain enzymes (proteases and pepsins) arent activated, and thus protein digestion slows way done. This has a variety of gastrointestinal and systemic consequences, including increased incidence of food allergy, increased risk for upper respiratory infections and a whole host of GI complaints.
