A new mouse study provides some clues as to how the Mediterranean diet boosts heart health. It appears that the diet’s unsaturated fats combine with the nitrate or nitrite found in veggies to make nitro fatty acids in the body. The fatty acids inhibit a certain enzyme, resulting in reduced blood pressure. Although the study was done in mice, its lead researcher thinks the results are applicable to humans since they have the same enzyme. The Mediterranean diet focuses on fish, vegetables, fruits, whole grains and nuts.
