A tasty idea with Potatoes from the back yard & a Waikato river trout. Crushed Potato & Smoked Trout Hash Cake with Poached Egg INGREDIENTS: 500g Manuka smoked Trout 700g crushed boiled potatoes 2 Tablespoons chopped spring onions or chives 2 Tablespoons chopped parsley 2 Tablespoons capers Zest of one lemon Juice of one lemon Salt & Pepper to taste Nice olive oil METHOD: In a bowl, lightly mix together all of the ingredients, and season to taste with salt & pepper. Shape the mix into cakes. Gently pan fry the cakes or heat in the oven until just warm. Serve topped with a poached egg. Drizzle with the olive oil. Garnish with capers, herbs, & a wedge of lemon.
