A word (and a question) about collard greens. I just made them for the first time (yes, I planted them on a dare, and most of my harvest had gone to a friend who loves them). I picked these fresh this afternoon (getting drenched in the rain while doing so). I looked at several recipies, and while I like my results (I used good bacon, half an onion, a bit of minced garlic, a dash of vinegar and sauted lightly, until bright green but wilted) I was wondering what others did ???
