ALERT! According to The University of Sydney Rice Syrup has a GI of 98! A low GI value is 55 or less... (GI = Glycemic Index, the rate at which the carbohydrate(sugars and starches) affect the blood glucose level. Go for low, unless you are an athlete! COMPARE! Agave is between GI 11-19, Coconut Sugar & Maple Syrup GI 54, Honey ranges from GI 35-50(Yellow box 35 and Stringy Bark 44 were lowest), BUT commercial blends can be as high as 72( according to ajcn.nutrition.org/content/76/1/5.full.pdf) Rice syrup is promoted as a low GI alternative(even quoted as 25 on some online sites!), and though it is less sweet than table sugar, it is 45% maltose (glucose + glucose), 3% glucose, and 52% maltotriose (a trisaccharide consisting of glucose + glucose + glucose molecules) -still very much a ‘sugar’. GI of 98 is high! Perhaps the description as being ‘sugar-free’ by sugar-free/quit-sugar diet advocates may refer to 0% fructose?
