ALPINE COLD-WEATHER COMFORT FOOD (I have posted this before, but its good enough to repeat): PLER (from Romansh Switzerland) -- a.k.a. DRY SOUP - Ingredients: 3 oz. grated Parmesan cheese 7 oz. Gruyere cheese (Swiss cheese will do in a pinch) 5-6 pieces of French bread3/4 - 1 1/2 cup beef stock (or bouillon in a pinch) 1/4 - 2/3 cup white wine One egg, beaten One small onion, minced Instructions; Grate the Gruyere (Swiss) coarsely. Cut bread into small bits and arrange on baking dish, Pour wine and stock (bouillon) mixture evenly over the bread, then top with cheese. Cook in a 350-400 F oven for 20-25. Then, ten minutes later, mix the beaten egg and minced onion together and pour over the hot PLER. Return to oven to completion. ---- Serve with a good green salad.
