I post awesome stuff everyday!~ Stephs Punkin Roll 2/3c. Pumpkin Pie filling 3 Eggs 3/4c. Flour 1c. Sugar 1tsp. Lemon Juice 1tsp. Baking Powder 1/2tsp Salt 1/4c Powdered Sugar Beat eggs for 5 minutes at high speed. Gradually add sugar. Add pumpkin and lemon juice. In separate bowl, combine flour, salt and baking powder. Add to pumpkin mixture and blend well. Line 10x15x1in pan with Parchment Paper, grease and flour. Pour directly onto parchment paper and bake. Bake at 375 for 15minutes. Sprinkle a tea towel with powdered sugar. Flip cake onto tea towel, removing paper and roll up. Let it sit until cool. Filling 1c. Powdered Sugar 1/4c. Butter 1/2tsp. Vanilla 1 block of Philly Cream Cheese Combine all filling ingredients until creamy. Unroll cake carefully and spread filling evenly and re-roll. Wrap in Saran Wrap and keep in refrigerator. Slice and serve! Enjoy!!
