After another cup or two of coffee, Ill start shredding cabbage. Three heads will make about a gallon of sauerkraut. Recipe: Shred cabbage in food processor Add one and one half tablespoons salt per head. Pound with wooden utensil or squeeze with hands until water is released. Stuff into gallon jar so tightly that water covers cabbage. Cut a whole outer leaf to cover the cabbage and weight the leaf down with a sealed jelly jar filled with water--or whatever will fit through the gallon jar opening--to keep the cabbage submerged. Cover with cheesecloth and rubber band--so the cabbage can breathe as it ferments. Set it in a cool, dark place for one week. Enjoy. Its ready to eat and can be refrigerated for several weeks.
