Aloo Paratha__with butter on top of it, curd, pickle and coriander chutney. Makes: 10 paratha Ingredients: aloo-paratha For The Dough- 2 cups whole wheat flour 1 tbsp melted ghee Salt to taste For The Stuffing- 4 medium size boiled potatoes 2 finely chopped onions 2 finely chopped green chillies 2 tbsp finely chopped coriander 1/4 tsp red chilli powder 1 tsp dry mango powder(amchur) Salt to taste Making Parathas- Whole wheat flour for rolling Ghee for cooking and greasing Method: For dough- Take whole wheat flour in a bowl. Add salt, ghee and mix well. Add sufficient water and knead into a little soft dough. Cover it and let it rest for 10 min. For stuffing- Peeled potatoes and mash it so that there are no lumps. Now add chopped onion, green chilli, coriander, red chilli powder, dry mango powder and salt and mix well. Roll each ball thinly into flat discs using wheat flour for dusting. 2. Now put a portion of the stuffing in the center. Pinch the edges together to seal the filling in, press lightly 3. Roll out again into a thick paratha using wheat flour for dusting. 4 . place the paratha on the hot skillet/tawa and cook for 20-30 second. flip the paratha and spread little ghee over it. 5. Allow this side to cook for some seconds and flip it over, again brush some ghee. 6. Keep flipping and cooking the paratha till they are crisp and brown from both side. Make all parathas this way. 6. Serve hot with curd or pickle.
