Alright yall...I will forewarn everyone that I am an eyeballing, taste testing cook, so I dont have exact measurements for anything. Youll just have to taste until it tastes right to you. I use 1 lb. ground beef, 1 lb. ground pork, and 4 pieces of thick cut bacon chopped into pieces, 1 small green bell pepper chopped (or half of a large one), 1 medium/large yellow onion chopped, 3 roma tomatoes chopped (or you can shortcut with a can of diced tomatoes), a can of black beans, a can of kidney beans, a can of crushed tomatoes, 2-3 cloves of minced garlic, and 1 Guiness beer. For my spices, I use sea salt, black pepper, cumin, chili powder (both regular and hot), regular and smoked paprika, and a little cayenne (if you like it spicy). I start by browning the bacon until the fat is rendered. Then I add in both ground meats and brown (I like mine really brown). Drain the fat. Add the veggies and season well. I season until the meat tastes good on its own. Then, I add the beans, tomatoes, and Guiness. Let it come to a boil then turn on low and let it simmer for hours. Once done, I taste for seasonings and adjust if needed (as all the liquid may have diluted it a bit). To serve, I top it with cheese, sour cream, and chopped green onion. Enjoy!
