Alright you did it! Here is the recipe I have to admit it was stolen from Angella Polson! Tweaked a bit though... This is 2 lbs sweet potatoes 1 lb brussel sprouts 3 garlic cloves minced 2 tbsp evoo 1 large onion sliced Salt, pepper, garlic powder, onion powder to taste Sliced sweet potatoes 1/4 inch thick, lay on a cookie sheet Slice brussel sprouts in half and arrange in cookie sheet on top of sweet potatoes. Slice onion and arrange on top of that. Top with evoo, salt pepper, garlic, garlic power, and onion powder. Toss to coat and bake at 375 for 35 minutes. This allows them to be crunchy yet soft. Very delish!
