Although canning, fermenting and pickling are all great ways to preserve your harvest bounty, I have to say i love the easy way out: I pretty much just freeze anything left over. Esp. tomatoes! I was delighted to see this Seattle Times article about the ease of the freeze, plus recipes if you want to take your freezing to the next level. But remember, you can also simply rinse your tomatoes, take the stem off, cut them in half if you feel like it and put them in a freezer bag!
