Alumni Spotlight: Ellen Edgerton, an alumna of the SStS Tibet trip - TopicsExpress

Alumni Spotlight: Ellen Edgerton, an alumna of the SStS Tibet trip and a member of the SStS Alumni Collegiate Board, has taken action toward an injustice within the Boston community through the promotion of equal access to REAL foods for all. This includes food that is either organic, local, ecologically friendly, fair trade, and/or humane. In particular, Ellen has focused her attention on a town near her school of Stonehill College called Brockton, in which members of the community do not have access to nutrient rich food, resulting in the majority of the town having nutrient related health problems such as heart disease, type 2 diabetes, and hypertension. To combat this problem, Ellen has worked with the farm at Stonehill to grow and harvest a variety of nutrition rich crops that are donated to local food banks in Brockton. These harvests terminate around November due to the cold weather, so for the final project of her Sustainable Agriculture class, Ellen implemented a TowerGarden, an areoponic vertical garden that will produce crops such as lettuce, arugula, and kale throughout the winter season. Consequently, the Brockton community will now continue to have access to the nutritious locally grown foods throughout the entire year, and Ellen is working with the food services at Stonehill to implement TowerGardens within the cafeteria to locally produce fruits and vegetables for the students. Ellen is currently a sophomore working towards a premed major and plans on working with holistic and preventative medicine after her graduation. We could not be more proud of the way Ellen embodies the values of Students Shoulder to Shoulder, and we are glad to have her on the SStS alumni Collegiate Board. Below are pictures of Ellen presenting the TowerGarden and interacting with local kids in Tibet.
