An authentic Chicago Style pizza is not like a regular thin crust pizza. The ingredients go in a certain order and are prepared in a certain manner. A lot of attention and love goes into each pie. At Chicago Joes this is the process: The dough is made from scratch. You have to let it rise, then dock it down, and let it rise again. The dough should be like a flakey biscuit. The Crust for each pizza is 2 inches thick and flavored. After the dough unlike a thin crust pizza, you put the Mozzarella Cheese (more than a pound) Then comes the meats of your choice. We like our Italian Sausage (more then a pound) Then on our Standard Deep Dish we put Pepperoni (more than a pound) We follow with mushrooms, red onions, and bell peppers Then we season and next comes the sauce The sauce is not a typical thin crust pizza sauce. We have to use whole sweet California Tomatoes. The tomatoes are crushed and seasoned. You cover the top of the pizza 70 to 80 % with Deep Dish Tomato Sauce. We Sprinkle the top with more Mozzarella Cheese and bake 25 to 35 minutes. When done baking we let cool for a couple of minutes, top with Parmesan Cheese, slice and serve. Thats the process. Thats the pie. Each Deep Dish Pizza is made by hand at Chicago Joes. We dont precook or buy frozen. To me each pie is a work of art and extension of my ability to create something from nothing.
