Anatomy of a cake.........#3: Did you know? On a 2 tier cake (10 inch on the bottom and 8 inch on the top) that with a scratch cake - there are soooooo many ingredients!!! And sometimes the stars have to just line up perfectly to get THE perfect cake????!!!??? So many factors can affect a cakes structure and rise. And just to do the above cake takes 4 1/2 cups of flour, etc! From sugar to baking powder.....from milk/cream to multiple flavors and extracts..........and all of it has to be measured just perfectly. Additionally, did you know that several of the ingredients must be at room temperature before adding? So that just adds more time required to bake just one two tier cake! Now not everyone does what I do, but it works for me and gives me a very tasty AND MOIST product! The ingredients alone total $16.25 for the above (todays price).......so we are up to $34.16 and we have STILL not baked or decorated that 2 tier cake! (Also - remember this too.......I am ONLY talking about a White/Vanilla Cake. Everything changes when you start talking about chocolate, strawberry, etc.
