Ancient Corn Pones Corn Pones are flattened cakes made from corn meal and water. Amazingly, they are baked on wooden paddles over hot coals and were an everyday staple of Native American tribes throughout the Eastern and Southeastern United States. When Europeans began colonizing the Americas, they readily adopted most Native American recipes and foods, especially corn dishes. Corn pones they renamed to "Hoecakes" or "askcakes". 1 Cup of Corn Meal 1 tsp Baking Powder 1/2 tsp Salt 1/2 Cup Water (or milk) 2 Tbs. Bacon Drippings Bacon Drippings for Frying Combine corn meal, baking powder, and salt in a bowl. Stir in water and melted drippings. Grease a large heavy skillet or griddle with bacon drippings. Drop batter by spoonful onto hot skillet. Fry over medium heat, browning on both sides. Searve hot with butter and honey.
