Another oca experiment! This time it was conchiglie pasta dressed with homemade basil pesto, zucchini sottolio (inspired by Heather Boyd!) and sautéed oca. The zucchini/courgette is actually a very large patty pan squash I found on the allotment in November and it has stored well in the garage. I flavoured the oil its in with some crushed garlic and finely chopped fresh mint. This was a seriously tasty dish!
