Another recipe from The Gud Foundations Laura Gudmundson-Tillson...Believe me, please, when I tell you the manner in which you blend the roasted ingredients together is WHAT MAKES THIS Salsa! Thats why Ive included a video with the recipe...ENJOY! Gud Roasted Mexican Salsa: Makes 1 1/2 Cups Ingredients: 4 Roma tomatoes 4 Tomatillos, husked 2-4 Jalapeño peppers, stemmed 1/4 C. Cilantro, chopped 1/4 C. Green onions, chopped 1 t. Salt, or to taste 1. Preheat grill 2. Rub the vegetables with a little olive oil. 3. Place the tomatoes, tomatillos and Jalapeño peppers in a grilling pan and place on a hot grill until all are lightly brown on all sides. Remove and allow to cool. 4. Place the grilled veggies and salt in a deep bowl and blend w a hand blender (see video). You can also place vegetables in a blender or food processor and blend until smooth. I like to use the hand blender because it allows for a thicker consistency. 5. Add chopped onions and cilantro. Blend with a spoon. 6. Adjust salt to taste. This salsa can easily be used as a dip with tortilla chips or as a compliment to your favorite Mexican dish. Every time I make this salsa, I am transported back to my Mothers kitchen. The aroma of the roasted vegetables fills my home with happy memories and expectations of a great meal to come.
