Apparently the meat and poultry industry have discovered what the Government has been doing more and more. With cut backs and downsizing, most agencies have either added more responsibilites, from other areas than the ones employees are trained in, OR they double/triple the assignments that each used to achieve competently. Of course, you will get sub-standard quality, but they roll the dice on their liability, and if they should be found negligent, cause injury or death, get caught in a law suit... there is always an expendable (and replaceable) subordinate employee, to sacrifice !
