Arabian Knight Flourless orange cake Ingredients: 2 oranges 250gr cater sugar 6 eggs (55-65g each) 250g almond meal 1 tsp baking powder Candied orange slices: 1 orange 160ml water 130g sugar 1 teaspoon of rose water Method: First step: Wash the oranges. Bring a large pot of water to boil and cook (simmer) the oranges for 1h 1/2. Drain, cool and puree. This step could be done ahead Second step is the candied orange slices Slice the orange into 1/4-inch. Put the slices in a nonreactive saucepan, and add enough water to cover them well, and bring to a simmer. Blanche the slices for ten minutes, then drain well. Put the oranges back in the saucepan with the water, sugar and rose water and cook the orange slices at a simmer for about ten minutes, or until they are tender and translucent. This step could be done also ahead Third step: Preheat the oven to 160 degrees. Grease and line a 20-22cm spring form cake tin with baking paper. Beat the eggs and caster sugar until well combined and fluffy. Stir in the orange puree followed by the almond meal and baking powder. Pour the batter into the prepared tin. Bake for 1hour or until the top is golden and a skewer inserted into the centre comes out clean. Allow to cool for few minutes and brush generosity the top with the rose essence flavoured syrup and decorate with the candied orange slices.
