Are all of the festive foods leaving you feeling weighed down? Then try these nutritious Pumpkin Spice muffins, to help lighten up your Holidays. Perfect for breakfast or as a snack! Our Dietitian Bridget Luff shows us how to make these yummy healthy treats! Recipe: Wet Ingredients: 1 1/3 cup canned pumpkin 1 tablespoon vanilla extract 1/2 cup honey 2 egg whites 2/3 cup unsweetened apple sauce Dry Ingredients: 1 tablespoon ground flax or chia seeds 1 cup whole wheat flour 1/2 cup coconut or almond flour (or 1/4 cup of each) 1 teaspoon baking soda 1/2 teaspoon salt 1 tablespoon Pumpkin Pie Spice (or more to taste) Directions: Preheat oven to 350 degrees Fahrenheit. Combine wet ingredients together. Combine dry ingredients together. Slowly stir dry ingredient mix into the wet ingredient mix; stir until all mix is moist (this will be a thick mixture). Spray muffin tin with cooking spray then spoon muffin mix into the muffin tin (fill the muffin tins about 2/3 of the way with the muffin mix). Bake muffin in oven at 350 degrees Fahrenheit for 15-20 minutes or until thoroughly cooked and golden brown. Note: these muffins will not rise as high as most muffins do, these muffins will be very moist, they taste the best when cooled and even better the next day! Enjoy!
