Around the world, trees are often cut down to make room for farming, and so the single biggest threat to forests remains the need to feed growing populations, particularly an expanding global middle class with the means to eat better. We, the middle class need to shift our diets away from so much protein, fat and sugar, too. That would go a long way toward saving rain forests and the environment. The myth that we must satisfy the current and growing demand for rich, sweet, meaty and processed foods is the single biggest obstacle to human and environmental health this planet faces.
