Arroz con Salchichas (vienna sausage) by Jenny Ingredients: 3 cups extra long grain white rice 4 cups of water 1 small of vienna sausages (cut into ½ slices) 1 packet of sazon con achoite 1 small can of tomato sauce (8oz.) Salt & pepper to taste 3 tablespoons of sofrito jar or homemade is fine ½ cup of green Spanish olives con pimento Olive oil 2 tablespoons Directions: Heat oil on medium heat in a caldero (non stick pot) Fry the vienna sausages with the sofrito just until brown or about 5 minutes. Add the sazon, tomato sauce, olives and let simmer for 5 minutes. Add the water and rice and stir well. Cook on high heat for about 15 minutes or until all the water evaporates. Once the water evaporates place heat on low and stir rice from the bottom up. Cover the caldero and let cook on low heat for 15-120 minutes or until the rice is cooked through and fluffy.
