As Ive mentioned before I dont follow recipes or measure while cooking. I cook with my hands, I add little by little and I taste as I go. If youre afraid of cooking chicken because you think you will overcook it then you need to make this. I use the thighs, its a very forgiving cut, you can overcook it and it will still be tender and succulent. This is such an easy dish to prepare and cook, plus making everything in 1 tray means less cleaning up, which makes me happy. Sofia and the whole family loved it, she ate so much, even 2 corns cobs! {Oven roasted chicken thighs} Chicken thighs White wine Rosemary Tomatos Onion Carrot Red pepper/capsicum Olive oil Paprika S&P Preheat your oven to 200c/390f In your oven tray place the chicken, sprinkle it all over with paprika, salt, pepper, rosemary. Peel and chop an onion, carrot & a few cherry tomatos or 1 large tomato. Finely chop a red pepper and add all to the tray. Pour in some white wine and a little olive oil. Mix everything around with your hands and evenly spread them on the tray. Cover with foil and cook for 10 minutes, then remove the foil and cook for a further 10-15 minutes, turning them half way. I also put the griller on for a few minutes to brown them even more, but thats optional. To check if theyre ready you should be able to press down on the thickest part and it should break apart, the meat should be white, not pink or translucent. I served the chicken with corn on the cob and roast potatos and pumpkin which I cooked together, the pumpkin breaks down while cooking and coats the potatos. Perfect!
