As promised, wed like to share one of the winning recipes from the 2nd Annual OpenDNS Chili Cook-Off! The recipe were sharing today is from Ashley Williams, who took home the coveted Peoples Choice award for the second year in a row. So what makes her chili so irresistible? Find out below: Ingredients: 1.5 lbs ground beef 1.5 - 2 lbs country sausage 1 lb pork chorizo A lot of bacon More bacon 2 jars of mild salsa 2 ~14-oz cans of diced tomatoes Ground cumin Ground cayenne pepper Crushed red pepper Half an onion 2 packets Chili Seasoning (McCormicks as an example brand) 1 bottle of Trumer Pils beer 1 6qt Crockpot 1 skillet How to put it all together: Cook ground beef and country sausage together with the chili seasoning. Next begin cooking the bacon — just get it started though, as it will finish cooking in the crockpot. Once thats done, toss the meat and bacon into the crockpot along with the salsa and diced tomatoes. Next, dice the onion and let it sweat in a pan before adding it to the crockpot as well. Now, onto the spices. In terms of using ground cumin, red peppers, and cayenne, you can add those according to your own taste. Theres no existing measurements, its all about whatever looks, smells, and tastes best to you! Now, to explain that beer: this chili has a sweet taste with a spicy kick, so the beer helps to smooth out the contrasting flavors and make the entire dish more cohesive.
