BANANA CAKE - great to take to work Ingredients 2 eggs 3 very ripe mashed bananas 1 cup of semi skimmed milk 150grams sugar 150grams self raising flour 2 tsp baking powder 100 grams chopped walnuts 100 grams currants 2 teaspoons of ginger powder 1 teaspoon cinnamon powder Method Beat eggs and sugar together thoroughly so it becomes white and fluffy. Mix flour and baking powder in a separate bowl. In a separate bowl mash bananas and add the milk Add the banana mixture and the flour to the egg and sugar mixture , mix thoroughly Put the mix in a greased baking tin and bake in the oven for about 50mins on 175 degrees. Test the cake with a skewer to see if its baked , if the skewers clean when taken out then it’s cooked .. Leave it to stand for 15 mins before taking it out of the tin.
