BBC2s Food and drink program portrayed traditional butchers as idiots in their program last week. The show hosted by Michel Roux Jr , entitled Every last crumb was filled with false information. Welsh farmer Tom Jones and chef Stevie Parle said that butchers used expensive cuts like Topside and a Silverside to make mince. The farmer was filmed cutting beef that we would not allow in the shop which had obviously not been properly matured. He explained that butchers used this cut to make mince but he recommended that it should be used as steak. Skilled butchers will be horrified by this. These cuts are expensive roasting cuts that are among the most popular with the knowledgable public. We suggest that you take your car to the garage for servicing but maybe the green grocer could do it for you.
