BEN AND TJ GET HEALTHY: Tj Serapion Tugas III and I are on a quest for better health through nutrition, exercise and relaxation training. After a couple of days off from Fitness Kitchen because of the holiday, our food delivery resumed this morning. Here’s a couple of days worth of meals, and today’s breakfast -- scrambled eggs with caramelized onions and blueberries over quinoa and low-sodium turkey ham. If you’re in the LA area, you can have Fitness Kitchen deliver fresh for you. If you’re not, many of their beneficial recipes can be recreated in your own kitchen. For this meal, youll need 1/2 c of quinoa, a carton of egg beaters, a package of turkey ham (preferably low-sodium) and some fresh berries (they’re in season!) and sliced white onion. Boil the quinoa ahead of time per package instructions. Carmelize the onions in a non-stick skillet. Remove and add the eggs. Cook to taste. Serves 2. DEEEE-licious!
