Bacon Quesadillas 2 tablespoons butter, softened 4 flour tortillas (6-in.) ½ cup shredded Colby-Monterey Jack cheese 4 bacon strips, cooked and crumbled 2 tablespoons salsa Sour cream, Guacamole, and additional salsa Butter one side of one tortilla; place in a small skillet, buttered side down. Top with half the chesse, bacon and salsa. Butter second tortilla; place on top, buttered side up. Cook over low heat for 1-2 minutes on each side or until cheese is melted. Repeat again for the second serving. Cut into wedges. Serve with sour cream, guacamole and additional salsa.
