Baked Fish Plaki {scrod or halibut} This is a healthy and delicious greek fresh fish dish. 1 1/2 lbs fresh white fish ( I used halibut filet but scrod or cod is popular on the East Coast) 1potato sliced very thin 1 zucchini sliced double width of potato 1 16 oz chopped Pomi tomatoes 6-7 minced garlic cloves 1 onion (chopped) 1 small bell pepper 1 hot pepper (optional) 1 bunch scallions (chopped with the greens) Juice from one lemon 1/3 cup olive oil 1/2 bunch Italian parsely Salt, pepper to taste 1 tsp dill. (Dried or fresh) 9x11 oiled baking dish or Pyrex Preheat oven to bake 375 Wash and pat dry the fish filet and add to a oiled baking pan. Add salt and pepper to both sides of fish and squeeze juice from one lemon. (Set aside until you make tomato sauce) In a large skillet, on med /high heat, heat olive oil and add onion an scallions and sauté for a few minutes then add the garlic and the pepper and continue to sauté till golden. Then add the tomatoes salt, pepper to taste and parsely and dill. Sauté for 2 or 3 more minutes. Add a few Tblsp cooked sauce to the baking dish surrounding the Fish and layer the sliced potatoes and zucchini on top of sauce and the pour the rest of the sauce right on top to cover fish and veggies. Place the baking open in. Preheated oven for about 40 minutes and then increase the temp to 400 for about 15 minutes more. Let sit for about 15 minutes to cool a bit and the serve. This is a meal in one but if you need a starch (like my husband does) serve with some white rice.
