Baker friends: Id like some advice. I want to do some specialty cupcakes decorated like dogs and cats as a thank you to the staff at our vet...whom weve been wearing out the last few months. Options are to decorate the tops of the cupcakes with icing designs (I have all the necessary equipment) or create cut-out designs with fondant as a topper for the cupcakes. Examples below. My icing skills are rusty, but probably manageable. Its really hard to make good stiff decorators icing here, not sure if its the humidity or the ingredients I can get. Fondant would seem easier on the surface, but Ive never worked with fondant. Suggestions?
