Bam-i A noodle dish with a smoky flavour, from Cebu island. What makes this different from your average stir fry noodles, is using two kinds of noodles: vermicelli and standard egg noodles. Timing is important so as not to overcook the noodles. Best cook the two types separately. Before you start 1. Soak vermicelli in water. Break or cut up all noodles into convenient lengths. 2. Break up and soak dried mush. 3. Prepare and cut up your veg, meat or fish 4. Soak a few pieces dried mushroom eg porcini or shiitake Ingredients Equal quantities vermicelli and egg noodle Enough veg/prawn/fish/meat to feed all your people, cut small Onion and garlic A few dried mushrooms. Some chorizo. or something else smoky, eg smoked fish, smoked dried tomatoes, or smoked paprika. What to do Fry up 1 onion, diced, and some minced garlic Add your meat fish or veg, fry it up well Now add chorizo or other smoked items, mushrooms, stock or water to cover, and seasoning to taste When meat is almost done, cook your noodles separately Combine all the ingredients when you dish up. Serve with soy sauce.
