Banana bread triple for a large 9X14 cake pan. Ingredients 4 ripe bananas, smashed or 3 finely cutup lg fresh bananas 1/3 cup melted butter or Crisco 3/4 cup sugar 2 xlg eggs, 2 teaspoon vanilla 1 teaspoon baking soda Pinch of salt 1 3/4 cups of all-purpose flour Method No need for a mixer for this recipe. Be careful to sift baking soda and flour before adding these to the mixture. Preheat the oven to 350°F (175°C)., Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Mix until mixture is a uniform color. Pour mixture into a well buttered 4x8 inch loaf pan. (Mix should be about 1 ¼ inch high )Bake for 1 hour at 350 F. let sit in warm oven 20 min, then cool on a rack. Remove from pan and slice to serve. You can make faces or spell happy birthday with pieces of bananas on top of the mixture when it is placed in the oven
