Barbecue Sauce 2 tablespoons olive oil 1 medium onion, finely chopped 4 cloves garlic, minced 1 bottle ketchup 1/2 bottle chili sauce 1/2 cup dark brown sugar 1/2 cup red wine vinegar 1/2 tablespoons Dijon mustard a few drops of Worcestershire sauce a few few drops of your favorite hot pepper sauce - salt and freshly milled black pepper to taste 1. Sauté onions and garlic in olive oil for 2-3 minutes, taking care not to brown them. 2. Add remaining ingredients and simmer for 30 minutes. 3. Remove from heat and adjust seasoning. 4. Refrigerate any sauce leftover in a bottle with a tight fitting lid for your next barbecue. Tip: To avoid tears while peeling or slicing onions, chill them in the freezer for 10 to 15 minutes before slicing. Or peel the onions under cold running water.
